Press, stuffing and automatic clipping machine for Lomo
The PIC LOMO is a machine which is specifically designed for stuffing Lomo (which means tenderloin in Spanish). This sausage is produced in large quantities with meat from the Iberian and White breeds.
All Spanish producers use semi-automatic machines to fill lomo due to this anatomical part being very delicate and a higher risk of cracks (which are a rupture of the muscle tissue) appearing in the longitudinal direction. The cracks could have a consequence of a risk of infiltrations during the curing process, which creates defects on the finished product.
To fully automate this process, which greatly reduces the risk of the problem described above, Inox Meccanica has designed and patented a new machine that automatically performs the same action that is currently performed by an operator with a traditional machine.
